New Immersive dining experience debuts in Las Vegas

Earlier this week, Bellagio Resort & Casino’s popular Conservatory & Botanical Gardens unveiled a never-done-before immersive dining concept called The Garden Table that affords guests the opportunity to enjoy curated culinary creations right in the heart of the conservatory.

Exclusive seatings are available for either brunch or dinner for guests to embark on an epicurean adventure, featuring specialty pre-fixe menus created by the award-winning Bellagio culinary team. Multiple courses spotlight fare from either the MICHAEL MINO Bellagio restaurant or Sadelle’s Café, with menus rotating seasonally.

Now through September 10, the Conservatory’s “Jungle of Dreams” stunning summer horticultural display supplies the setting for the inaugural Garden Table experience, complete with 28 animal sculptures, and nearly 10,000 flowers and plants.

With whimsical delights around every corner, highlights of the current installation include fanciful pink flamingos, ornate blue parrots, monkeys, blue herons, giraffes and a 20-foot-tall lion, underscored by a theatrical soundtrack of bird, cricket and wind sounds. With The Garden Table planned to remain available alongside all future Bellagio Conservatory displays, the artistic table settings will change to complement the surrounding theme.

We wanted to create an entirely new and immersive way for our guests to experience the beauty of this space,” said Bellagio Vice President of Food & Beverage Josef Wagner. “The sights, sounds, colors, and energy of the Conservatory, combined with chefs Michael Mina and Mario Carbone curating the culinary journey, make for an epic experience that only Bellagio can deliver.”

The Garden Table is destinated to become one of Las Vegas’ most in-demand private dining experiences, and can accommodate up to six guests with reservations limited to two hours each. Guests will need to check in with the host desk at the restaurant that corresponds to their chosen meal time.

— Kona Blue Prawn with leche de tigre and coriander

Starter

— Watermelon & Cucumber topped with chili crunch and mint

— Michael Mina’s Ahi Tuna Tartare handmade with mint, pine nuts, Asian pear, and habanero-infused sesame oil

Mid-Course

— Crispy Spot Prawns with young coconut, makrut lime, sweet & sour mango, and curry leaf

— Miso-Marinated Hamachi Kama with ginger scallion and sudachi

— Char-Broiled Shellfish served with Maine lobster, Cherrystone clams, Kona abalone and Pacific & Atlantic oysters, all brushed with red miso and lemon

Fresh Catch

— Ginger-Scallion Broiled Whole Fish served with kimchi fried rice and glazed bok choy

Dessert

— Coconut Soufflé made with haupia sorbet, black sesame anglaise, and masago honey crisp
