Holland America Launches New Morimoto Sushi Bar

Holland America Line is set to delight its guests with the launch of a new specialty sushi bar as part of its acclaimed Morimoto by Sea dining experience. Developed by renowned chef Masaharu Morimoto, the new venue will be introduced on five of the cruise line’s ships, further expanding its fresh fish options and elevating the in-cabin culinary experience.
The specialty sushi bar is already available onboard the MS Nieuw Amsterdam and will soon be rolling out on four additional vessels—Rotterdam, Koningsdam, Nieuw Statendam, and Eurodam—through June 2025. Each installation is tailored to fit the unique ambiance and layout of the ship, ensuring that guests can enjoy a consistent yet distinct dining experience across the fleet.
On the Rotterdam, Koningsdam, and Nieuw Statendam, the new sushi bar is designed to offer a blend of intimate and social dining options. These ships will feature bar seating for up to 12 guests, complemented by additional table seating in a thoughtfully arranged surrounding area. This layout is intended to create a relaxed, convivial atmosphere where diners can watch as their sushi is expertly prepared while enjoying the vibrant flavors crafted by chef Morimoto. Meanwhile, on Eurodam, the venue will showcase a small sushi preparation counter with seating arranged around it. This setup allows guests to get an up-close look at the culinary artistry involved in preparing each dish, adding an interactive element to their dining experience.
The menu at the new specialty sushi bar is as innovative as it is diverse. Guests can choose from a range of offerings, including classic sushi and sashimi, creative rolls, and other delectable dishes. Highlights include an inventive tuna pizza, perfectly cooked sticky ribs, pork gyoza dumplings bursting with flavor, and even lobster pad thai—a fusion dish that reflects chef Morimoto’s signature style and culinary creativity. By combining traditional sushi techniques with modern culinary twists, the menu is set to cater to both purists and adventurous food lovers alike.
Michael Stendebach, Vice President of the Food, Beverage, and Rooms Division for Holland America Line, expressed his excitement about the new venture. “With chef Morimoto’s knowledge and expertise in the sushi world, it made sense for him to expand beyond his Morimoto by Sea restaurant and develop a specialized sushi bar featuring his signature style and flavors,” Stendebach explained. “We’re excited to extend our fresh fish options and give our guests access to another specialty venue with cuisine by such a renowned chef.”
