Holland America Freshens Up Onboard Dining

Holland America Line is elevating its culinary experience at sea with a major expansion of its “Made Fresh Daily” onboard offerings. The cruise line is now serving up an even broader array of freshly made dishes, featuring pasta, bread, and delectable dessert options, ensuring that guests enjoy a true taste of artisanal fare during their voyage.
Guests sailing on Holland America’s fleet will soon be treated to an impressive selection of freshly prepared meals. Diners can savor a range of options—from traditional baguettes and spaghetti to made-to-order pizzas—crafted with the highest quality ingredients. In addition, the cruise line now makes fresh gelato, waffle cones, desserts, and pastries every day, reinforcing its commitment to delivering an exceptional culinary experience on board.
This summer, the cruise line is set to introduce a signature bread that promises to become a guest favorite. The new sourdough raisin bread with pumpkin seed will be available each evening in the Pinnacle Grill and on dressy nights in the dining room. “When bread or pasta is made fresh, you can certainly taste the difference, which is why we take a close look at our culinary program to assess what we can make on board from scratch as another way to bring our Destination Dining culinary platform to life,” said Michael Stendebach, Vice President of Food, Beverage and Rooms Division for Holland America Line. His comments underline the company’s passion for quality and authenticity in its onboard dining experiences.
Chef Ethan Stowell has also been hard at work developing new, Italian-inspired offerings for Holland America’s Lido Market. His innovative menu includes a variety of fresh pasta dishes, such as tortiglioni with basil pesto, haricot vert and baby potatoes; paccheri with spicy tomato, shrimp and parsley; spaghetti with beef and ricotta meatballs accompanied by basil and tomato; casarecce with beef short rib bolognaise; and baked conchiglie with mozzarella and tomato basil. Stowell is also debuting the “Primo” at New York Pizza—a new pizza creation featuring salami, pickled peppers, and red onion atop a freshly made crust, promising to become a standout favorite among guests.
In addition to these enhanced dining options, Holland America Line is once again partnering with Sur La Table to offer cooking classes that bring the shipboard culinary experience ashore. The new “Made from Scratch Ravioli with Holland America Line” class is set to debut this month, providing participants with a hands-on opportunity to prepare exquisite dishes inspired by the cruise line’s acclaimed Destination Dining program. During the class, guests will learn how to make smoked salmon ravioli with a rich vodka cream sauce, Swiss chard and ricotta ravioli with a delicate lemon brown butter, and even a unique stroopwafel apple crumble.
“Our initial class on fresh fish with Sur La Table was fantastic, and we are excited to expand the partnership by having consumers prepare and cook a menu that is carefully crafted by both brands, connecting to the more than 140 ports we call at across Europe,” explained Kacy Cole, Chief Marketing Officer for Holland America Line.
