Holland America Line Introduces ‘Morimoto By Sea’ Aboard Nieuw Amsterdam

Holland America Line is set to elevate its culinary offerings with the debut of ‘Morimoto By Sea’, the first nightly stand-alone restaurant by Chef Masaharu Morimoto, aboard the Nieuw Amsterdam starting December 16, 2023. This new dining venue underscores the cruise line’s commitment to exceptional cuisine and its partnership with Chef Morimoto as its Fresh Fish Ambassador.

The restaurant, located on Nieuw Amsterdam’s Observation Deck adjacent to the Tamarind restaurant, promises a multi-course dining extravaganza. Reflecting Holland America Line’s new Global Fresh Fish Program, ‘Morimoto By Sea’ will feature a menu that emphasizes fresh fish dishes, showcasing the finest seafood in line with Chef Morimoto’s renowned culinary style.

Beyond its focus on seafood, the restaurant will also cater to a variety of dietary preferences, offering beef, chicken, vegetarian, and vegan dishes. In addition, guests will have the opportunity to indulge in Chef Morimoto’s unique alcoholic beverages, including Morimoto Dream Brut Rosé and Morimoto Junmai Daiginjo sake.

The experience comes with a cover charge of $55 per person, plus an 18 percent gratuity, allowing guests to immerse themselves in a premium dining environment.

Michael Stendebach, Holland America Line’s Vice President of Food, Beverage, and Guest Services, expressed enthusiasm for the new restaurant. He highlighted that featuring Chef Morimoto’s cuisine on Nieuw Amsterdam not only enhances the specialty dining experience for guests but also aligns with the high culinary standards shared by Holland America Line and Chef Morimoto.

He emphasized the uniqueness of ‘Morimoto By Sea’, expressing his eagerness to share his culinary passion with guests aboard the Nieuw Amsterdam. The restaurant is poised to offer an exceptional dining experience, bringing Chef Morimoto’s signature flavors and dishes to guests as they sail around the world with Holland America Line.
