As 2024 comes to a close, Marriott International is shifting its focus to next year’s anticipated travel trends, particularly in the culinary realm. The company has released a report titled The Future of Food 2025, highlighting the ten major food trends expected to shape the dining landscape in 2025.
The report emphasizes the Asia Pacific region’s growing significance in culinary tourism, which accounted for over 37.8 percent of the global culinary tourism market in 2023 and is projected to expand further. Oriol Montal, Managing Director of Luxury for Asia Pacific (excluding China) at Marriott, stated, “The Future of Food 2025 report highlights Asia Pacific’s pivotal role in shaping global culinary landscapes. Dining has become an essential component of the global tourism landscape, and we are committed to culinary excellence across all our Luxury Group brands.”

- The Asian Wave: The influence of Asian culinary traditions continues to grow. As travelers flock to the region for its gastronomic offerings, diaspora chefs are returning to their roots, infusing traditional recipes with international flair and creating new culinary experiences.
- Sustainability and Ancient Techniques: There is a resurgence of labor-intensive, ancient cooking methods and local ingredients. As sustainability gains importance, many chefs are opting for traditional techniques over modern machinery to create labor-intensive dishes.
- Fine Dining: Hyperlocal and Superfine: Fine dining is evolving into two distinct trends. Hyperlocal dining emphasizes local traditions and ingredients, while superfine dining focuses on exclusivity, offering intimate, membership-based restaurant experiences.
