Airlines use food to add local flair in flight
Hawaiian Airlines’ menu emphasizing island flavors and Air Canada’s efforts to use Canadian products such as salmon and cheese are examples of how airlines are improving the quality of inflight food and using it as a way to showcase local flair. “At our international stations, [we ask] what’s a typical meal that you would see out of Brussels or that you would see out of Hong Kong?” said Andrianna Pischos, manager of catering product design at Air Canada.
