La Marchande serves approachable take on French cuisine
John Fraser has opened La Marchande restaurant inside New York City’s Wall Street Hotel to offer a lighter and more approachable version of French-inspired food. “We’re using those tools, the global-pantry tools, to lighten things up a little bit and maybe not be quite as heavy or cream-and-butter-laden as what would be a French brasserie,” the Michelin-starred chef said of his menu, which includes summer rolls with beef tartare, tuna tartare and pickled asparagus.
