Riffs on paella are not well-received by traditionalists
Five years ago, when British chef Jamie Oliver published a paella recipe that called for the inclusion of chorizo, thousands of people responded on Twitter, saying the recipe was too far from the traditional dish to be called paella. The comments are part of an ongoing conversation regarding the authenticity of Spain’s famous dish, as purists argue that alterations of it are corrupting the traditional, authentic paella while others defend variations on the dish made with nontraditional ingredients.
