Giorgio Scavarelli, sommelier at London’s The Colony Grill Room at The Beaumont hotel, talks about his introduction to the world of wine, his expansion of the restaurant’s wine list, the question diners ask him most often and his favorite pairing: salumi and cheeses from the valleys of Italy’s Piedmont region, where he’s from, alongside nebbiolo. “This is home for me,” Scavarelli said of the food and wine pairing.
